Ingredients 

Pie Crust

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold and diced
  • ¼ cup ice water

Filling

  • 4 cups sour cherries pitted
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter until the mixture resembles coarse crumbs.
  3. Add ice water gradually and mix until dough forms. Divide dough in half, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out one half of the dough and fit it into a pie dish.
  5. In another bowl, mix cherries, sugar, cornstarch, and vanilla. Pour into the pie crust.
  6. Roll out the second half of the dough and place it over the filling. Seal and crimp the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 60 minutes or until the crust is golden brown and the filling is bubbly.
  9. Let the pie cool before serving.
