Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add pumpkin, egg, and vanilla, and beat until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop dough by tablespoonfuls onto the prepared baking sheet. Flatten slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until edges are lightly browned. Cool on a wire rack.
