Slow Simmer Beef Stew

Main Ingredients
- 2 lbs Beef chuck, cut into cubes
- 3 cups Beef broth
- 2 Carrots, sliced
- 2 Potatoes, diced
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 tablespoon Tomato paste
- 1 teaspoon Thyme
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the beef cubes on all sides, then remove and set aside.
3. In the same pot, add the onions and garlic, cooking until softened.
4. Stir in the tomato paste, thyme, salt, and pepper.
5. Return the beef to the pot, add the beef broth, carrots, and potatoes.
6. Bring to a boil, then reduce heat and let it simmer for about 3 hours.
7. Check seasoning and adjust if necessary before serving.
