Ingredients 

Main Ingredients

  • 4 pieces Veal shanks about 1.5 inches thick
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 4 cloves Garlic minced
  • 1 cup Dry white wine
  • 1 can Diced tomatoes 14.5 oz can
  • 1 cup Beef broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Season the veal shanks with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat. Brown the shanks on all sides.
  3. 3. Transfer the shanks to the slow cooker.
  4. 4. In the same skillet, add carrots, celery, onion, and garlic. Cook until softened.
  5. 5. Pour in the white wine and scrape up any browned bits from the skillet.
  6. 6. Transfer the vegetable mixture to the slow cooker.
  7. 7. Add diced tomatoes, beef broth, thyme, and rosemary to the slow cooker.
  8. 8. Cover and cook on low for 8 hours, or until the meat is tender.
  9. 9. Serve hot, garnished with fresh parsley if desired.
