Ingredients 

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1 unit green bell pepper, chopped
  • 1 unit onion, chopped
  • 3 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 2 cups cooked rice

Instructions 

  1. Add chicken, sausage, tomatoes, broth, bell pepper, onion, celery, garlic, and seasonings to the slow cooker.
  2. Stir to combine.
  3. Cook on low for 4 hours.
  4. Add shrimp and cooked rice, stir, and cook for an additional 30 minutes.
  5. Serve hot.
