Instructions
Heat 1 tablespoon of oil in a wok over medium-high heat. Add shrimp and cook until pink. Remove and set aside.
Add remaining oil to the wok. Add garlic and cook until fragrant.
Add peas and carrots, cook for 2-3 minutes.
Push veggies to the side, pour in beaten eggs and scramble.
Add rice and soy sauce, stir to combine.
Return shrimp to the wok, mix well. Garnish with green onions.
