Shrimp Ceviche Cups
Fresh and zesty shrimp ceviche served in crispy cups.

Main Ingredients
- 1 lb Shrimp, peeled and deveined small pieces
- 1 cup Lime juice
- 1 cup Diced tomatoes
- ½ cup Chopped red onion
- 1 cup Chopped cilantro
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 12 Mini crispy cups store-bought or homemade
1. In a mixing bowl, combine shrimp, lime juice, tomatoes, red onion, cilantro, salt, and pepper.
2. Let the mixture sit for 15 minutes to allow the shrimp to marinate and 'cook' in the lime juice.
3. Spoon the ceviche mixture into mini crispy cups.
4. Serve immediately and enjoy!
