Ingredients 

Main Ingredients

  • 1 lb Beef Chuck Roast shredded
  • 8 oz Enchilada Sauce
  • 8 Tortillas corn or flour
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent. Add minced garlic, cumin, chili powder, salt, and pepper. Cook for another minute.
  3. Add shredded beef to the skillet and mix well with the spices and onions.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and some shredded cheese. Roll up and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the rolled tortillas. Sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
