Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can crushed tomatoes (28 oz)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 6 eggs
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, cook until softened.
  2. Add minced garlic, cumin, paprika, and coriander. Cook for another minute.
  3. Pour in crushed tomatoes, salt, and pepper. Simmer for 10 minutes.
  4. Make small wells in the sauce and crack the eggs into each well. Cover and cook until eggs are set.
  5. Garnish with fresh parsley and serve hot.
