Ingredients 

Main Ingredients

  • 1 cup Heavy Cream
  • ¼ cup Dry Sherry
  • ¼ cup Butter
  • 2 tablespoon All-purpose Flour
  • 1 lb Mixed Seafood (shrimp, scallops, crab)
  • 1 teaspoon Salt
  • ½ teaspoon Paprika
  • ¼ teaspoon Cayenne Pepper
  • 2 tablespoon Tomato Paste
  • 2 large Egg Yolks

Instructions 

  1. 1. In a saucepan, melt the butter over medium heat.
  2. 2. Whisk in the flour and cook for 1-2 minutes.
  3. 3. Gradually whisk in the heavy cream and cook until thickened.
  4. 4. Stir in the tomato paste, dry sherry, salt, paprika, and cayenne pepper.
  5. 5. Add the mixed seafood and cook until just done.
  6. 6. In a small bowl, beat the egg yolks. Gradually whisk in a small amount of the hot sauce to temper the yolks.
  7. 7. Stir the tempered yolks back into the sauce and cook for another 2-3 minutes.
  8. 8. Serve hot over toast or rice.
