Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add shrimp and cook until pink. Remove from heat and chop into bite-sized pieces.
In a mixing bowl, combine shrimp, crab meat, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
Fill each tortilla with the seafood mixture and roll up. Place seam-side down in a baking dish.
In a separate bowl, mix sour cream and salsa. Pour over the enchiladas.
Sprinkle shredded cheddar cheese on top.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
