Meringue
- 6 pcs Egg Whites
- 1 ½ cups Granulated Sugar
- ½ teaspoon Cream of Tartar
- 1 ½ cups Chopped Cashews
Buttercream
- 1 cup Unsalted Butter softened
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
In a mixing bowl, whisk egg whites until foamy. Add cream of tartar and gradually add sugar, beating until stiff peaks form.
Fold in chopped cashews. Spread mixture onto prepared baking sheets.
Bake for 25-30 minutes or until lightly golden. Let cool completely.
For the buttercream, beat butter until fluffy. Gradually add powdered sugar and vanilla extract, beating until smooth.
Layer meringue and buttercream, finishing with a layer of buttercream. Sprinkle with chopped cashews.
Chill in the refrigerator before serving.
