Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

Filling

  • 1 cup sugar
  • 6 tablespoon unsalted butter cut into pieces
  • ½ cup heavy cream room temperature
  • 1 teaspoon sea salt
  • 8 oz bittersweet chocolate chopped
  • 1 cup heavy cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into a tart pan. Bake for 10 minutes. Let cool.
  3. In a saucepan, melt sugar over medium heat until it turns amber. Add butter and stir until melted. Slowly add cream and sea salt. Let cool slightly.
  4. Pour caramel into the crust. Chill for 30 minutes.
  5. Heat cream until simmering. Pour over chopped chocolate and let sit for 5 minutes. Stir until smooth.
  6. Pour chocolate ganache over caramel layer. Chill for at least 2 hours before serving.
