Ingredients 

Root Vegetables

  • 2 cups Carrots peeled and chopped
  • 2 cups Parsnips peeled and chopped
  • 2 cups Sweet Potatoes peeled and chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the carrots, parsnips, and sweet potatoes.
  3. Drizzle the olive oil over the vegetables and toss to coat evenly.
  4. Sprinkle the salt, black pepper, and dried thyme over the vegetables and toss again.
  5. Spread the vegetables out in a single layer on a baking sheet.
  6. Roast in the preheated oven for 35-40 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
  7. Serve hot and enjoy!
