Ingredients 

Main Ingredients

  • 2 cups cherry tomatoes
  • 1 cup zucchini, chopped
  • 1 cup bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 ounces pasta
  • ¼ cup parmesan cheese, grated

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cherry tomatoes, zucchini, and bell pepper on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
  3. Roast the vegetables in the oven for 20-25 minutes, until they are tender and slightly charred.
  4. While the vegetables are roasting, cook the pasta according to the package instructions. Drain and set aside.
  5. In a large mixing bowl, combine the roasted vegetables and cooked pasta. Toss to combine.
  6. Serve the pasta topped with grated parmesan cheese.
