  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the rack of lamb with salt and pepper.
  3. In a small bowl, mix olive oil, garlic, rosemary, and thyme.
  4. Rub the mixture all over the lamb.
  5. Place the lamb on a roasting pan, fat side up.
  6. Roast for 25 minutes for medium-rare.
  7. Let it rest for 10 minutes before slicing.
