  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 0.25 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 0.25 cup chopped fresh basil
  • 1 pound pasta

Instructions 

  1. Cook pasta according to package instructions.
  2. In a large bowl, mix ricotta, Parmesan, olive oil, garlic, red pepper flakes, salt, and pepper.
  3. Drain pasta, reserving 1 cup of pasta water.
  4. Add pasta to the bowl with the ricotta mixture. Toss to coat, adding reserved pasta water as needed.
  5. Stir in fresh basil and serve.
