Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add ricotta, egg, vanilla, and lemon zest. Mix well.
  4. Gradually add dry ingredients to wet ingredients. Mix until just combined.
  5. Drop tablespoonfuls of dough onto prepared baking sheet. Bake for 15 minutes or until edges are golden.
  6. Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
