Ingredients 

Filling

  • 4 cups rhubarb chopped
  • 1 cup sugar
  • 3 tablespoons all-purpose flour
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Crust

  • 1 unit pie crust unbaked

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine rhubarb, sugar, and flour.
  3. Spread rhubarb mixture evenly in the pie crust.
  4. In another bowl, whisk together sour cream and vanilla extract.
  5. Pour the sour cream mixture over the rhubarb.
  6. Bake for 50 minutes or until the filling is set and the crust is golden brown.
  7. Let the pie cool before serving.
