Rhubarb Bars Recipe

Crust
- 1 cup flour
- ½ cup butter cold, cubed
- ¼ cup sugar
Filling
- 3 cups rhubarb chopped
- 1 cup sugar
- 2 tablespoon flour
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour, butter, and sugar for the crust. Press into a baking dish.
Bake crust for 15 minutes or until lightly golden.
In another bowl, mix rhubarb, sugar, flour, and vanilla for the filling. Pour over the baked crust.
Bake for an additional 25 minutes or until the filling is set.
Let cool before cutting into bars.
