Ingredients 

Main Ingredients

  • 2 cups Refried beans
  • 2 cups Shredded cheese Cheddar or Mexican blend
  • 8 pieces Tortillas Corn or flour
  • 1 cup Enchilada sauce

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  3. In a mixing bowl, combine refried beans and 1 cup of shredded cheese.
  4. Fill each tortilla with the bean and cheese mixture, roll them up, and place them seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  6. Sprinkle the remaining 1 cup of shredded cheese over the top.
  7. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  8. Serve hot and enjoy!
