Shortcake
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup cold butter, cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Topping
- 1 pound strawberries, hulled and sliced
- ½ cup blueberries
- ¼ cup powdered sugar
- Whipped cream for topping
Preheat oven to 425°F (220°C).
In a large bowl, mix flour, granulated sugar, baking powder, and salt.
Cut in butter until mixture resembles coarse crumbs.
Stir in heavy cream and vanilla extract until just combined.
Drop dough by spoonfuls onto a baking sheet.
Bake for 12-15 minutes or until golden brown.
Let shortcakes cool on a wire rack.
Toss strawberries and blueberries with powdered sugar.
Split shortcakes in half and layer with berries and whipped cream.
