Ingredients

  • 1 cup red quinoa
  • 2 cups water
  • 1 bunch Tuscan kale stems removed, chopped
  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  4. Add chopped Tuscan kale to the skillet, season with salt and pepper, and cook until wilted.
  5. Combine cooked quinoa with the kale mixture. Serve warm.
