Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups red bell peppers, chopped
  • 4 cups tomatoes, chopped
  • 4 cups vegetable broth
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add chopped red bell peppers and tomatoes. Cook for about 10 minutes.
  5. Add vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. Use a blender to puree the soup until smooth.
  7. Season with salt and pepper to taste. Serve hot.
