Main Ingredients
- 4 cups red bell peppers, chopped
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 tablespoon olive oil
- to taste salt and pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and cook until translucent, about 5 minutes.
3. Add minced garlic and cook for another minute.
4. Add chopped red bell peppers and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
6. Serve hot and enjoy!
