Red Pepper Pasta

Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 3 Red Bell Peppers, roasted and chopped
  • 1 cup Heavy Cream
  • 1 lb Pasta
  • to taste Salt and Pepper
  • ¼ cup Parmesan Cheese, grated

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until softened.
  3. 3. Add roasted red bell peppers to the pot. Cook for a few minutes until heated through.
  4. 4. Transfer the mixture to a blender and blend until smooth.
  5. 5. Return the blended mixture to the pot. Stir in heavy cream and cook over low heat until warmed through.
  6. 6. Add cooked pasta to the sauce. Toss to coat. Season with salt and pepper to taste.
  7. 7. Serve with grated Parmesan cheese on top.
