Red Pepper and Hummus Sandwich
A simple and delicious sandwich with roasted red peppers and hummus.

Main Ingredients
- 4 slices Whole grain bread
- 1 cup Hummus
- 1 whole Red bell pepper roasted and sliced
- 1 handful Arugula
1. Spread hummus on one side of each slice of bread.
2. Layer roasted red pepper slices on two of the bread slices.
3. Add a handful of arugula on top of the red peppers.
4. Top with the remaining bread slices, hummus side down.
5. Cut the sandwiches in half and serve.
