Ingredients 

Main Ingredients

  • 4 slices Whole grain bread
  • 1 cup Hummus
  • 1 whole Red bell pepper roasted and sliced
  • 1 handful Arugula

Instructions 

  1. 1. Spread hummus on one side of each slice of bread.
  2. 2. Layer roasted red pepper slices on two of the bread slices.
  3. 3. Add a handful of arugula on top of the red peppers.
  4. 4. Top with the remaining bread slices, hummus side down.
  5. 5. Cut the sandwiches in half and serve.
