  • ¼ cup pan drippings (from country ham or bacon)
  • 1 tablespoon all-purpose flour

Instructions 

  1. Heat the skillet over medium heat and add the pan drippings.
  2. Whisk in the flour and cook for about 1 minute.
  3. Slowly add the coffee, whisking constantly to avoid lumps.
  4. Bring to a simmer and cook until thickened, about 5 minutes.
  5. Season with salt and pepper to taste. Serve hot.
