Ingredients 

Pie Crust

  • 2 cups All-purpose flour
  • 1 cup Unsalted butter cold and diced
  • ¼ cup Ice water

Filling

  • 4 cups Fresh raspberries
  • 1 cup Granulated sugar
  • ¼ cup Cornstarch
  • 1 tablespoon Lemon juice

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter until the mixture resembles coarse crumbs.
  3. Add ice water gradually, mixing until dough forms. Divide dough in half, shape into discs, and refrigerate for 30 minutes.
  4. Roll out one disc of dough and fit it into a pie dish. Set aside.
  5. In another bowl, mix raspberries, sugar, cornstarch, and lemon juice. Pour into the pie crust.
  6. Roll out the second disc of dough and place it over the filling. Seal and crimp the edges. Cut slits in the top crust to allow steam to escape.
  7. Bake for 45 minutes or until the crust is golden and the filling is bubbly. Let cool before serving.
