Raspberry Oatmeal Cookie Bars

- 1 cup Butter softened
- 1 cup Brown Sugar packed
- 1 teaspoon Vanilla Extract
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 2 cups Oats old-fashioned
- 1.5 cups Raspberry Jam
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a large mixing bowl, cream together the butter and brown sugar until smooth. Mix in the vanilla extract.
Combine the flour and baking soda; stir into the creamed mixture. Mix in the oats.
Press ⅔ of the mixture into the bottom of the prepared pan. Spread the raspberry jam over the crust. Crumble the remaining oat mixture over the top.
Bake for 35 minutes in the preheated oven, or until golden brown. Cool in the pan before cutting into bars.
