Ingredients 

Crust

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ½ cup butter cold and cubed

Filling

  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 3 units large eggs
  • 1 tablespoon lemon zest
  • ½ cup lemon juice freshly squeezed
  • ½ cup raspberries fresh or frozen

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine flour and sugar for the crust. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes, or until lightly golden. Remove from oven and let cool slightly.
  4. In another bowl, whisk together sugar and flour for the filling. Add eggs, lemon zest, and lemon juice, and whisk until smooth. Gently fold in raspberries.
  5. Pour the filling over the baked crust. Bake for an additional 20-25 minutes, or until the filling is set.
  6. Let the bars cool completely in the pan before cutting into squares. Dust with powdered sugar if desired.
