Ingredients

  • 1 cup Butter softened
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar packed
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 2 cups Old-Fashioned Oats
  • 1 cup Shredded Coconut
  • 1 cup Chocolate Chips

Instructions 

  1. Preheat oven to 350°F (175°C). Grease baking sheets or line with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking soda, baking powder, and salt; stir into the creamed mixture until just blended. Mix in the oats, coconut, and chocolate chips.
  4. Drop by rounded spoonfuls onto the prepared baking sheets.
  5. Bake for 8 to 10 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
