Ingredients 

Pie Filling

  • 2 cups raisins
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoon butter

Pie Crust

  • 1 double pie crust store-bought or homemade

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a saucepan, combine raisins and water. Cook over medium heat until raisins are plump, about 10 minutes.
  3. In a mixing bowl, combine sugar, cornstarch, and cinnamon. Gradually add to the raisin mixture, stirring constantly until thickened.
  4. Remove from heat and stir in vanilla extract, lemon juice, and butter. Let cool slightly.
  5. Line a pie dish with one of the pie crusts. Pour the raisin mixture into the crust.
  6. Cover with the second pie crust. Seal and flute the edges. Cut slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  8. Let cool before serving.
