Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 cup Mushrooms, sliced
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • to taste Salt and Pepper

Instructions 

  1. Rinse quinoa under cold water.
  2. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a frying pan, heat olive oil over medium heat. Add onions and garlic, cook until softened.
  4. Add mushrooms to the pan and cook until tender.
  5. Combine cooked quinoa with the mushroom mixture. Season with salt and pepper to taste.
