Quinoa Stuffed Peppers

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups vegetable broth
- 4 bell peppers tops cut off and seeds removed
- 1 cup black beans cooked and drained
- 1 cup corn kernels fresh or frozen
- 1 cup diced tomatoes canned or fresh
- 1 teaspoon cumin
- 1 teaspoon chili powder
- to taste salt and pepper
- 1 cup shredded cheese optional
Preheat oven to 375°F (190°C).
In a pot, bring quinoa and vegetable broth to a boil. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Bake in the preheated oven for 25-30 minutes.
If using, sprinkle shredded cheese on top of the peppers during the last 5 minutes of baking.
