Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 4 bell peppers tops cut off and seeds removed
  • 1 cup black beans cooked and drained
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes canned or fresh
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup shredded cheese optional

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a pot, bring quinoa and vegetable broth to a boil. Reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked.
  3. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  5. Bake in the preheated oven for 25-30 minutes.
  6. If using, sprinkle shredded cheese on top of the peppers during the last 5 minutes of baking.
