Quinoa Stuffed Bell Peppers

Main Ingredients
- 4 Bell peppers tops cut off and seeds removed
- 1 cup Quinoa cooked
- 1 cup Black beans drained and rinsed
- 1 cup Corn frozen or canned
- 1 cup Diced tomatoes canned
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 cup Shredded cheese optional
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, and chili powder.
Stuff the bell peppers with the quinoa mixture.
Place the stuffed peppers in a baking dish and cover with foil.
Bake for 30 minutes. If using cheese, uncover and sprinkle cheese on top, then bake for an additional 5 minutes.
