Ingredients 

Main Ingredients

  • 4 Bell peppers tops cut off and seeds removed
  • 1 cup Quinoa cooked
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Diced tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 cup Shredded cheese optional

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, and chili powder.
  3. Stuff the bell peppers with the quinoa mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30 minutes. If using cheese, uncover and sprinkle cheese on top, then bake for an additional 5 minutes.
