Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups chicken broth
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. Cook quinoa in chicken broth according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned.
  3. 3. Add onion and garlic to the skillet, cook until softened.
  4. 4. Stir in cooked quinoa, salt, and pepper. Cook for another 5 minutes.
  5. 5. Add cherry tomatoes and parsley, cook for 2 more minutes.
  6. 6. Serve hot and enjoy!
