Instructions
1. Cook quinoa in chicken broth according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned.
3. Add onion and garlic to the skillet, cook until softened.
4. Stir in cooked quinoa, salt, and pepper. Cook for another 5 minutes.
5. Add cherry tomatoes and parsley, cook for 2 more minutes.
6. Serve hot and enjoy!
