Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn cooked
  • 1 cup Cherry Tomatoes halved
  • 1 Avocado diced
  • ¼ cup Cilantro chopped
  • 1 Lime juiced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Cook the quinoa according to package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, avocado, and cilantro.
  3. 3. Add the cooled quinoa to the bowl.
  4. 4. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
