Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper chopped
  • 1 lime juiced
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ cup cilantro chopped

Instructions 

  1. 1. In a saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  2. 2. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, lime juice, cumin, and salt.
  3. 3. Mix well and garnish with chopped cilantro before serving.
