Cake Ingredients
- 1 cup dates chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 cup sugar
- 1 tablespoon butter softened
- 1 unit egg beaten
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
Topping Ingredients
- 0.5 cup brown sugar
- 0.25 cup butter softened
- 0.5 cup milk
- 1 cup shredded coconut
Preheat your oven to 350°F (175°C).
In a bowl, pour boiling water over the chopped dates and add baking soda. Let it sit until it cools.
In another bowl, cream together the sugar and butter. Add the beaten egg and vanilla extract.
Combine the flour and baking powder. Gradually add the flour mixture to the creamed mixture, alternating with the date mixture.
Pour the batter into a greased baking pan. Bake for 45 minutes or until a toothpick comes out clean.
For the topping, mix brown sugar, butter, milk, and shredded coconut. Spread over the hot cake and broil until bubbly and golden.
