  • 2 cups Milk
  • 1 cup Pumpkin puree
  • ½ cup Sugar
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Instructions 

  1. In a saucepan, combine the rice and milk. Cook over medium heat, stirring frequently, until the mixture starts to thicken, about 20 minutes.
  2. Add the pumpkin puree, sugar, pumpkin pie spice, vanilla extract, and salt. Continue to cook, stirring constantly, until the pudding is thick and creamy, about 15 minutes more.
  3. Remove from heat and let cool slightly before serving. Enjoy warm or chilled.
