Ingredients 

Cake

  • 1 cup Pumpkin Puree
  • 1 cup Granulated Sugar
  • ½ cup Vegetable Oil
  • 2 Eggs
  • 1 ½ cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Pumpkin Pie Spice

Streusel Topping

  • ½ cup Brown Sugar
  • ½ cup All-Purpose Flour
  • ¼ cup Butter, melted
  • 1 teaspoon Cinnamon

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 baking dish.
  2. In a mixing bowl, combine pumpkin puree, sugar, oil, and eggs. Mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Pour batter into prepared baking dish.
  5. For the streusel topping, combine brown sugar, flour, melted butter, and cinnamon in a bowl. Mix until crumbly. Sprinkle over the batter.
  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving.
