Ingredients 

Main Ingredients

  • 1 kg Pumpkin peeled and chopped
  • 1 unit Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil, then sauté the onion and garlic until softened.
  2. 2. Add the chopped pumpkin and vegetable broth. Bring to a boil, then reduce heat and simmer until the pumpkin is tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth. Return to the pot.
  4. 4. Stir in the coconut milk, and season with salt and pepper to taste. Heat through, then serve.
