Ingredients

  • 12 oz Jumbo pasta shells
  • 2 cups Pumpkin puree
  • 1 cup Ricotta cheese
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Ground nutmeg
  • 2 tablespoon Olive oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to the package instructions. Drain and set aside.
  3. In a mixing bowl, combine the pumpkin puree, ricotta cheese, Parmesan cheese, salt, black pepper, and nutmeg.
  4. Stuff each pasta shell with the pumpkin mixture and place them in a baking dish.
  5. Drizzle olive oil over the stuffed shells.
  6. Bake in the preheated oven for 20-25 minutes, until the tops are golden and bubbly.
