Pumpkin Cheesecake Bars

Crust
- 1.5 cups Graham Cracker Crumbs
- 0.5 cups Melted Butter
Filling
- 16 oz Cream Cheese softened
- 1 cup Pumpkin Puree
- 1 cup Sugar
- 3 large Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Pumpkin Pie Spice
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs and melted butter. Press into a 9x13 baking pan.
In a mixing bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.
Pour the filling over the crust. Spread evenly.
Bake for 45 minutes or until set. Let cool before cutting into bars.
