Ingredients 

Main Ingredients

  • 1 can corned beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can tomato sauce
  • 1 cup water
  • 1 potato, diced potato, diced
  • 1 carrot, diced carrot, diced
  • 1 teaspoon oregano
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion, bell pepper, and garlic until softened.
  3. Add corned beef and break it up with a spoon.
  4. Stir in tomato sauce, water, potato, carrot, and oregano.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
