Puerto Rican Canned Corned Beef Stew Recipe

Main Ingredients
- 1 can corned beef
- 1 medium onion, chopped
- 1 bell pepper, chopped bell pepper, chopped
- 2 cloves garlic, minced
- 1 can tomato sauce
- 1 cup water
- 1 potato, diced potato, diced
- 1 carrot, diced carrot, diced
- 1 teaspoon oregano
- to taste Salt and pepper
- 2 tablespoon olive oil
Heat olive oil in a pot over medium heat.
Sauté onion, bell pepper, and garlic until softened.
Add corned beef and break it up with a spoon.
Stir in tomato sauce, water, potato, carrot, and oregano.
Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
