Ingredients 

Main Ingredients

  • 3 lbs Beef Chuck Roast
  • 2 cups Beef Broth
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 4 large Carrots, chopped
  • 4 large Potatoes, chopped
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • to taste Salt and Pepper

Instructions 

  1. 1. Season the beef with salt and pepper.
  2. 2. Heat the pressure cooker and sear the beef on all sides.
  3. 3. Remove the beef and sauté the onions and garlic.
  4. 4. Add the tomato paste, thyme, and rosemary. Cook for a minute.
  5. 5. Return the beef to the pot, add the broth, carrots, and potatoes.
  6. 6. Lock the lid and cook on high pressure for 60 minutes.
  7. 7. Let the pressure release naturally.
  8. 8. Remove the beef and vegetables. Slice the beef and serve.
