Potato Skins Recipe
Delicious and crispy potato skins perfect for a snack or appetizer.

Main Ingredients
- 4 large Russet Potatoes
- 2 tablespoon Olive Oil
- 1 cup Cheddar Cheese, shredded
- 4 slices Bacon, cooked and crumbled
- 0.5 cup Sour Cream
- 2 tablespoon Chives, chopped
- to taste Salt
- to taste Black Pepper
Preheat your oven to 400°F (200°C).
Scrub the potatoes clean and pierce them with a fork a few times. Bake for about 45 minutes or until tender.
Let the potatoes cool slightly, then cut them in half lengthwise and scoop out most of the flesh, leaving a bit to support the skin.
Brush the potato skins with olive oil, inside and out. Sprinkle with salt and pepper.
Place the skins on a baking sheet and bake for another 10 minutes until crispy.
Remove from oven and sprinkle with shredded cheddar cheese and crumbled bacon. Return to oven and bake until cheese is melted, about 5 minutes.
Top with sour cream and chopped chives. Serve immediately.
