Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 cups leeks, cleaned and chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, sauté the leeks in a bit of butter until soft.
  2. 2. Add the diced potatoes and broth. Bring to a boil, then simmer until potatoes are tender.
  3. 3. Blend the soup until smooth. Return to pot and stir in the cream. Season with salt and pepper.
  4. 4. Serve hot with a sprinkle of chives or parsley if desired.
