Ingredients 

Main Ingredients

  • 3 lb Chuck Roast
  • 2 cups Beef Broth
  • 1 cup Red Wine
  • 4 Carrots peeled and chopped
  • 4 Potatoes quartered
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat your oven to 300°F (150°C).
  2. 2. Heat olive oil in a Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned. Remove and set aside.
  3. 3. In the same pot, add onions and garlic. Cook until softened.
  4. 4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  5. 5. Add beef broth, thyme, rosemary, and season with salt and pepper. Return the roast to the pot.
  6. 6. Add carrots and potatoes around the roast.
  7. 7. Cover and transfer to the preheated oven. Cook for 4 hours, or until the meat is tender.
  8. 8. Remove from oven and let rest for a few minutes before serving.
